Why is my banana muffin hard? ›

Sometimes if the batter of muffins is over mixed or overcooked it results into hard muffins.

What makes muffins less dense? ›

Muffin recipes are usually made with a simple batter including vegetable oil. This makes them softer and less dense and sturdy than a cupcake made from butter-based cake batter.

What not to do when making muffins? ›

Overmixing the batter.

When you overmix the batter, it crushes the air bubbles and ruins the fluffy texture. → Follow this tip: To ensure a batch of light, fluffy muffins, mix the dry ingredients with the wet ingredients until just barely combined, and no more dry flour is visible.

What is the best flour for muffins? ›

Cake Flour: The flour with the lowest protein content (5 to 8 percent). The relative lack of gluten-forming proteins makes cake flour ideal for tender baked goods, such as cakes (of course), but also biscuits, muffins and scones.

How to doctor up banana muffin mix? ›

Pecans, walnuts, and almonds can add a crunchy texture to moist muffins. Gently fold in 1/2 cup of your favorite chopped nuts into your muffin batter. Or try adding a scoop of peanut butter or peanut butter powder to the batter. If the mix gets a little too thick, just add a splash of water to even out the consistency.

Do you put baking soda or baking powder in muffins? ›

In muffins, there's usually only baking powder. Baking powder is double acting, meaning it activates upon mixing with moisture and then again upon the heat of the oven. For recipes only leavened with baking soda, which loses efficacy over time if it's not baked immediately, this technique likely wouldn't work as well.

Why are my banana muffins wet inside? ›

Using too many bananas

It may be difficult, but you must fight the urge to use more bananas than your recipe requires. Using too many bananas can make your bread heavy and damp in the center, causing it to appear undercooked and unappealing.

What ingredient prevents muffins from falling apart? ›

How do you keep muffins from falling apart? It's gluten. See, to a baker, gluten holds the whole world together.

Can bananas be too ripe for muffins? ›

While it's okay if the banana peel is dark brown or even black, if the inside is too, then the fruit is beyond ripe and now on its way to rotten. Another sign that bananas have gone bad is if they start leaking any fluids. When in doubt, just toss the bananas out.

How do you keep muffins moist and fluffy? ›

The Best Way to Store Muffins
  1. STEP ONE: Let the muffins cool completely on a wire rack.
  2. STEP TWO: Line an airtight storage container with paper towels.
  3. STEP THREE: Place muffins in the container, on top of the paper towels.
  4. STEP FOUR: Place an additional paper towel layer on top of the muffins.

What is the secret to high muffins? ›

Bake your muffins at 400°F for the first 5 minutes, then drop the temperature to the more standard 350°F for the remainder of the bake time. This method sparks the leavening agents (especially baking powder) in the batter to react quicker, creating that gorgeously risen top.

Why put water in the oven when baking muffins? ›

The steam creates gases (water vapor) within the dough to expand granules. Bread tends to bake quickly in the first few minutes of baking and the water aids in slowing down the process just enough. Steam also helps with making a crispy crust.

Should you let muffin batter rest? ›

Rest the Muffin Batter

The first, most hands-off way to make your muffins pop (literally) is to let the batter rest. Make the batter, cover the bowl with plastic wrap, and let the batter rest at room temperature for about 1 hour. If you're short on time, just 30 minutes can make a difference.

What to add to muffin mix to make it moist? ›

Add greek yogurt to your muffin mix for extra moistness. Top with a vanilla glaze or sugar sprinkles.

How do you keep homemade muffins moist? ›

Are muffins better with oil or butter? ›

The muffins made with oil had a very light and soft texture, they were perfect! The texture of the oil muffins was superior to the texture of the butter muffins. I will also say using butter is probably best in a recipe that doesn't have a lot of flavor add-ins, like a basic muffin recipe.

How to get domed muffins? ›

According to O. Corriher, the way to get a perfectly puffed up dome on your muffins is to increase your oven heat. She says that 400° should do it, no matter what the recipe says. The higher baking temperature means that the the outside edges of the muffin will set while the middle is still liquidy.
