Chorizo sausage and corn chili is a spicy, flavorful slow cooker recipe, easily whipped up with only 15 minutes of prep time, and perfect for cold fall and winter days!

It’s a rainy, cool day in San Diego, which means it’s finally starting to feel like fall! When it comes to recipes, nothing says fall to me more than a big bowl of chili!

During the fall and winter months growing up in Oklahoma, my Mom would put on a crock pot of chili once a week. I loved smelling the delicious aromas fromthe chili when I arrived home from school!

Last week, I whipped up a delicious twist on our classic family chili recipe that was inspired by an amazing side dish I recently had.The side dish was corn with chorizo and shish*to peppers served at my favorite San Diego steakhouse, Cowboy Star.

Since I know that shish*to peppers aren’t available everywhere, I swapped those out for jalapenos and turned that tasty side dish into a delicious new corn chili recipe!

Ingredients

  • 1 tbsp olive oil
  • 1 cup onion (diced)
  • 2 jalapeños (seeded & diced)
  • 2 cloves garlic (minced)
  • 2 lbs chorizo
  • 2 cans (15 oz) tomato sauce
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups corn kernels (fresh or frozen)
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tsp kosher salt

Optional toppings

  • ½ cup sour cream
  • 1 avocado (diced)
  • ¼ cup cilantro
  • 1 cup cheddar cheese (shredded)
  • 1 cup tortilla strips

Instructions

Pour the olive oil in a large skillet over medium heat. Add the onion and jalapeños, cook3-4 minutes. Add the garlic and cook for an additional minute. Place the chorizo in the skillet and cook 6-8 minutes. Drain any grease from the chorizo with a mesh strainer.

Place in a largeslow cookerChorizo Corn Chili - Slow Cooker Recipe (4). Add the tomato sauce, diced tomatoes, corn kernels, chili powder, cumin, paprika, cayenne pepper, black pepper and salt.

Stir everything together. Set to low and cook for 6-8 hours, or set to high and cook for 3-4 hours.

Add the toppings of your choice. I topped mine with a healthyheaping handful of shredded cheddar cheese. Mmm melty cheese on warm chili, so good!

I also added some fresh chopped cilantro, avocado and tortilla strips for a little crunch!

Growing up, we couldn’t have chili without cornbread, and this Chorizo Corn Chili recipe gave methe perfect excuse to whip up my favorite Gluten Free Cheddar Jalapeno Cornbread! It was a match made it cheesy jalapeño heaven 😉

FAQs

Do you have to brown meat before slow cooker chili? ›

Do you have to brown the meat for slow cooker chili? Technically, no. The beef, bell pepper, onion, and garlic will all cook in the slow cooker, but browning the meat and sautéing the vegetables in a skillet before adding it to the slow cooker brings much more flavor to the chili. You'll be glad you did—promise!

Can you overcook chili in a slow cooker? ›

Yes, but it would take a while. I have cooked this chili for 9 hours on low and it was delicious but ever-so-slightly burnt on the top. The tomatoes contain sugar, which caramelizes in the slow cooker, and will eventually burn if it cookes for too long. Anything longer than 10 hours on low is risky.

How long can you leave chili in a crockpot on low? ›

If it is ground beef and beans, 6 hours is good. If it is regular meat then 8 will be more tender. Bad Chili can be left a long time. Really good chili with vanish quickly…

Why is chili better in the slow cooker? ›

The Best Way to Cook Chili:

The low and slow cooking process melds the flavors of the chili seasoning into every bite and the beef becomes so tender, juicy, and irresistible. You can slow cook on low for 6-8 hours or on high heat for 3-4 hours.

What happens if you don't brown meat before slow cooking? ›

"Browning, or caramelizing, meat before putting it into a slow cooker isn't 100 percent necessary, but it is well worth the effort for the most flavorful and full-bodied end result," he says. "The caramelized surface of the meat will lend rich flavor and color to the finished dish."

What happens if you don't brown meat for chili? ›

For those with this question in the future, the answer summed up: browning adds more flavor. Not browning the beef beforehand results in greasy chili and boiled mushy yucky beef.

Should I put corn in my chili? ›

Many chili aficionados add a little sweetness to their chili with some brown sugar or even maple syrup to complement the earthy peppers and balance out some of the spice. But adding corn cobs to your chili is the secret to bringing natural sweetness without adding sugar.

What vegetables should not be added to a slow cooker? ›

Tender vegetables

Vegetables such as peas, asparagus and peppers can become a flavorless, mushy mess in a slow cooker.

Can I leave chili in crockpot on low overnight? ›

This chili will be done at 4 hours because you are essentially warming up already cooked ingredients; however, it can be left on the slow cooker for up to 8 hours. We typically leave it on 8 hours since that's generally how long we would be gone during the day when preparing this recipe.

Is it safe to leave chili in a crockpot on warm overnight? ›

So here's the verdict regarding chili food safety: You can leave it in the slow cooker for hours after it's done cooking if the cooker is set to the “low” or “keep warm” setting.

Is it safe to leave a crockpot on warm overnight? ›

Don't leave it on 'warm' all day

Most appliances will automatically shut off after 20 or so hours on this setting, but you shouldn't leave food in a slow cooker for an extended length of time. The general rule of thumb is that 2-4 hours is the maximum length of time you can leave food in a slow cooker on warm.

Do you drain beans for chili? ›

Unless the recipe tells you to keep the canned beans in their liquid, you should drain your can and give the beans a good rinse before using. This will improve the flavor and texture of your finished dish.

What is the secret to really good chili? ›

Only Add Flavorful Liquids

Instead of adding water to your chili, add some more flavor with chicken or beef broth, red wine vinegar, Worcestershire sauce, or even beet or wine. Each one of these options brings out different notes and levels of sweetness that will enhance your culinary creation.

Should I stir my slow cooker chili? ›

In the crock-pot/slow cooker I would never stir it or even take off the lid until it should be close to done. In a pressure cooker, the same thing. On the stove top, I stir often because as it thickens, you want to stir to prevent possible scorching on the bottom of the pot.

What kind of onion for chili? ›

Sweet onions are great for caramelizing due to their higher sugar content. You can cook them into your chili, serve them raw over top, or even elevate your chili with a sophisticated caramelized onion topping! Some of my favorite sweet onions are Walla, Walla, Maui, and Vidalia Onions.

Can you put meat in slow cooker without browning? ›

You can add beef to the slow cooker without browning. Searing it in a hot pan to create a caramelised crust is not necessary but can make a richer flavour. Simply add the meat to your slow cooker with aromatics, stock and sauces and cook either on High for 4-5 hours or on Low for 5-8 hours.

Can you put raw meat straight into a slow cooker? ›

Kornblum tells SELF that while, yes, you technically can slow-cook with raw meat, you won't get your best results this way. You'll have better luck in the flavor department if you sear it first— browning adds a nice, caramelized depth to the dish.

Can I put raw ground beef in a slow cooker? ›

All you do is add up to 3 pounds of ground beef to your crock-pot (I have done as many as 5 lbs. at one time). Break up the beef and add ¼ cup water (per pound of beef). Turn your crock-pot on and cook on HIGH for 2-3 hours or LOW for 4-6 hours.
