If your family likes cooked carrots as much as our family does — and you need an easy side dish recipe — this one is for you!

This Slow Cooker Baby Carrots with Honey and Brown Sugar recipe has onlya few key ingredients: baby carrots, brown sugar, honey, and butter (plus a bit of water and salt). We gave them a sprinkle with chopped fresh dill but if you’re looking to save money, you can certainly skip the garnish.

The easy part comes in because these glazed carrots are cooked in your Crock-Pot or slow cooker. Ideally, you will want to use one that is a 3 – 4.5 quarts size. Other than giving them a stir about halfway through, you can throw all the ingredients into the crock and let them do their thing. Once they are done, you have tender carrots that are sweet and delicious!

Not enough liquid: Slow cookers rely on moist heat to soften food. If you don't have enough liquid in the pot, the carrots won't cook evenly and may stay tough. Aim for at least a cup or two of liquid, enough to reach about a third of the way up on the ingredients.

When should I add my vegetables to a slow cooker? ›

This is especially true with aromatics like onion and garlic.

Can you overcook carrots in a slow cooker? ›

Is it better to cook on high or low in a slow cooker? ›

Certainly, foods will cook faster on high than on low. However, for all-day cooking or for less-tender cuts, you may want to use the low setting. It's safe to cook foods on low the entire time -- if you're leaving for work, for example, and preparation time is limited.

Do carrots go soft in slow cooker? ›

Yes, they will definitely soften in the slow cooker. However, it does take a while, so you need to allow yourself some time and check for doneness. It also depends on what texture you want as well as if you are adding other vegetables to cook with it, etc.

A big part of this is because cells in the vegetable are held together with a particular kind of carbohydrate called hemicelluloses (say that five times fast!).

Why are my carrots hard in the middle? ›

There are several things that can cause carrots to go "woody". Environmental factors such as too hot and dry, or too cold and wet, irregular watering, poor drainage or leaving the carrots in the ground for too long.

Why do my carrots get rubbery? ›

They're dehydrated

Your carrots might just need a big gulp of water. If you notice that your bag of carrots is bendy, place them in a glass jar or zip-top plastic bag and fill it with water to cover them. Check back in an hour; they should be firming right up.

Is 4 hours on high the same as 8 hours on low in a slow cooker? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

What liquid is best for a slow cooker? ›

To ensure the dinner cooks correctly and doesn't get soggy, decrease the amount of liquids you add. Usually only ½ to 1 cup of liquid does the trick. And, for extra flavorful results, try using liquid like broth, wine, or juice, instead of just plain water.
