These red velvet cookies start with a cake mix, making them super quick and easy to prepare! The soft dough makes for a delicious cookie!

My husband, the cookie connoisseur, has been requesting things like plain old chocolate chip cookies and peanut butter oatmeal chocolate chip cookies. Now, it’s not that I have a problem with those cookies – they’re classics for a reason! It’s just…I like to experiment and have fun in the cookie department!

You know gooey butter cake? It’s a midwestern thing, so if you’ve never heard of it, that’s likely why.

It’s a cake that’s so full of sugary sweet gooey goodness and I knew it would work well in cookie form.

I was so right! These red velvet cake mix cookies are exactly the ooey gooey butter cookies I was dreaming of!

I’ve also madegooey butter chocolate chip cookiesand those are just as insanely good! You can’t go wrong when you start with a cake mix.

How to make red velvet cookies with cake mix:

Grab your favorite brand of red velvet cake mix, some butter, cream cheese, an egg, and vanilla. We add white chocolate chips to make these extra yummy and pretty.

That’s all you’ll need for these cake mix cookies!

Mix everything but the chocolate chips together using a stand or hand mixer until the batter is smooth and creamy.

Stir in the chocolate chips by hand.

Grab a cookie scoop and drop these onto a parchment lined baking sheet.

We like to sprinkle a few extra chocolate chips on top of the balls of dough. It makes for extra pretty cookies!

Pop them in the oven and that’s it! So quick and easy!

Red Velvet Gooey Butter Cookies

These red velvet cookies start with a cake mix, making them super quick and easy to prepare! The soft dough makes for a delicious cookie!

Ingredients

  • 1 box Red Velvet cake mix
  • 8 ounces cream cheese
  • 1/2 cup butter room temperature
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup white chocolate chips

Instructions

  • Preheat oven to 350 degrees.

  • Beat together the cream cheese and butter until well combined. Beat in the egg and vanilla. Add the cake mix and beat until well combined. Stir in the chocolate chips.

  • Roll tablespoonfuls of dough into balls and place on a parchment lined baking sheet.

  • Bake for 10 - 12 minutes or until the top is set, but the center is still gooey.

  • Cool on a wire rack.

    I’ve always loved cake mix cookies but I’ve never added cream cheese before, these are amazing!!!! Just an FYI, this recipe doesn’t call for water but some do. Over the years I have found that if you add too much water to cake mix cookies, that will tend to make them have more of a cake texture. When it says add cake mix, Don’t EVER mix the cake with box instructions first, just add the dry cake mix only. Sorry so long but hope this helps ?

    I’ve made these for the last 2 Christmas seasons. And both times they turned out great. I like to fill a fat glass jar with them and put black elastic with a buckle around the middle. So santa cute!

    This might be a stupid question but when you say add cake mix is that just the powder or do I combine everything on the box and then mix it into this recipe?

    Didn’t turn out for me at all! Second time I have tried to make cookies using cake mix and didn’t like either. Cakey/spongy, dry….mix so thick couldn’t stir…followed directions to a T.

    Thought maybe I was cooking too long so tried, cooking less time but then they just tasted doughy. Wanted to share these but can’t…maybe just throw them away. 🙁
